3 cups , washed baby spinach
1 and 3/4 cups fresh mushrooms (cremini or white – sliced thinly)
3 green onions, ( both green stalk and white bulbs-sliced thinly)
2-3 tablespoons olive oil
4 boneless skinless chicken breast halves (pounded thin)
salt and pepper to taste
4 slices Mozzarella cheese
Pre-heat a large over medium high heat. Add 2-3 Tablespoons of olive oil to the skillet and saute the spinach, mushrooms and onions until the mushrooms are browned and tender. Remove from the skillet and set aside and keep warm.
Season pounded chicken breast with salt and pepper. Add more olive oil as needed to the skillet and cook the chicken over medium high heat for 4-5 minutes on each side or until a meat thermometer reads 170°F.
Top with cheese. Cover and cook for 2-3 minutes longer or until cheese is melted.
To serve, top each chicken breast with reserved spinach, onion and mushroom mixture.
